Plum galette

A summer classic that never fails to impress both in terms of taste and visuals.

This is a very new blog so I am working on updating all of my recipe descriptions! In the meantime, you can still find the recipe for this super plum galette below!

RECIPE (8 servings):
INGREDIENTS:

Sweet pastry crust:
140g cold butter
70g icing sugar
40g almond meal
1g salt
230g flour
1 egg

Frangipane filling:
50g soft butter
50g icing sugar
50g almond meal
1 egg
1tsp vanilla essence

Plum filling:
Around 10 small red plums
1 tbsp Brown sugar
1tsp icing sugar

METHOD:

Crust:
Mix the dry ingredients together then add the butter and mix until there are fine crumbs. Add the egg and mix until incorporated. Quickly mould mixture with your hands then film and leave in fridge for 1 hour.

Frangipane filling:
Whisk the butter with the sugar, add the egg, mix well. Then mix in the almond meal and vanilla.
Roll out the pastry between two sheets of baking paper to around 4mm thickness then spread the frangipane filling in a circle, in the middle of the pastry – careful not to go right to the pastry borders.

Plum filling:
Slice the plums then place them on the frangipane filling. Fold the pastry over the plums, then sprinkle with brown sugar. Cook in the oven at 180 for around 30 mins. Allow the tart to cool then sprinkle with icing sugar.
