
Such a fun and light way to enjoy summer treats!
These easy-to-make popsicles are made with greek yoghurt and a red fruit puree, then dipped in hazelnut milk chocolate. So fun and light and makes the perfect guilt-free summer dessert!

RECIPE (Makes 12 70ml magnum moulds): |
INGREDIENTS: Yoghurt filling: 500g full fat Greek yoghurt 250g frozen red fruit 2tbsp maple syrup 1tbsp sugar (optional) 1tsp vanilla Chocolate hazelnut topping: 250g good quality milk chocolate 50g hazelnuts METHOD: Yoghurt filling: Allow the frozen red fruit to defrost then grind in a food processor to obtain a puree then mix in 1tbsp sugar (optional). Thoroughly mix the yoghurt with the maple syrup and vanilla then LIGHTLY stir in the puree with the Greek yoghurt (don’t stir completely, the aim is to have pretty white and red patches). Pour mixture into the moulds and leave to set overnight. Chocolate hazelnut topping: Grind hazelnuts roughly in a food processor. Melt the chocolate in a large bowl then stir in the ground nuts. Dip the popsicles half way into the chocolate hazelnut mixture, allow to set (around 5 mins), eat immediately or store in airtight container in the freezer for a week. |
