
An entremet that is bursting with a delicious coffee flavour, but with a crunchy praline biscuit that also makes the difference.
Coffee-flavoured desserts are one of my favourite things ever. If there’s tiramisu on the menu, then you can bet that I’ll be ordering it! This coffee entremet is a winner even for non-coffee lovers, as although there is certainly the coffee taste, it is not too overpowering.
This entremet is made up of two sponge layers, a crunchy praline biscuit and a creamy coffee ganache that just melts in the mouth. All of these layers are contained in a light and airy coffee mousse. The entremet is toppped with a milk chocolate glaze and dark chocolate decorations.

The crunchy praline biscuit layer is a must! It adds that extra crunch that I believe to be vital for the entremet texture.
I made this cake for my MIL’s 60th birthday and did everything I could to save one slice for a photo (if you’re like me, you need to see the inside of a cake before deciding whether to make it or not – understandable!), needless to say, the dessert went down a storm!
